Ingredients and Kitchenware

  • 1 Pumpkin of any size.
  • 1/3 cup cinnamon.
  • 1/3 cup turmeric.
  • 1/3 cup coriander seeds.
  • 1/3 cup olive oil.
  • — —
  • 1 air fryer/dehydrator.
  • 1 knife larger than at least half the width of the pumpkin.
  • 1 large mixing bowl.
  • 1 mixing spoon.
  • 1 cup measurer

Directions

  1. When it comes to preparing the pumpkin, we want to start by scooping out all that pulp, either using a spoon or an ice cream scoop if you have one.
  2. Follow up by cutting the pumpkin into wedges using a decent kitchen knife, it is advisable not to cut them too thick as they will take a lot longer to dehydrate, maybe 0.1 inches — 0.2 inches.
  3. Then finally remove the hard skin either using the knife or a peeler.
  4. Okay, the pumpkin is ready. Lets spice it up. Start by putting all your wedges of pumpkin into your mixing bowl, pour all your olive oil, spices (cinnamon, turmeric and coriander/cilantro seeds) over the wedges and stir with your mixing spoon.
  5. Make sure all wedges are evenly coated for maximum flavor.
  6. With everything ready, set the dehydrator to 130 degrees and leave for an hour, before turning it down to 120 degrees.
  7. Set the timer to 16 hours and fill each tray or basket with wedges, make sure there is no overlap, but also try to avoid any gaps between the wedges. This will ensure evenness but also max quantity at one time. You may have to do multiple baskets or trays to do a whole pumpkin, so keep any undone in the fridge.
  8. Just repeat until you run out of pumpkin, spices or energy!
